The Best Vinaigrette Ever!

Yummy!!!! I think I just made the best dressing ever… it has a crisp fresh taste that mixes all of the strong flavors together perfectly. Plus, all of the ingredients have wonderful health benefits!

Lemongrass can help prevent the growth of some bacteria and yeast and might be able to relieve pain, reduce fever, stimulate the uterus and menstrual flow, and has antioxidant properties. It has been used to treat stomach aches, high blood pressure, vomiting, fever, achy joints, colds and exhaustion (1).

Ginger is a tropical plant that has green-purple flowers and an aromatic underground stem (called a rhizome). It is commonly used for cooking and medicinal purposes. Historically, ginger has been used in Asian medicine to treat stomach aches, nausea, and diarrhea. Today, ginger is used as a folk or traditional remedy for postsurgery nausea; nausea caused by motion, chemotherapy, and pregnancy; rheumatoid arthritis; osteoarthritis; and joint and muscle pain (2).

Garlic is part of the allium family and has been shown to slightly lower blood cholesterol levels, slow the development of atherosclerosis (hardening of the arteries) and slightly lower blood pressure. Onions are similar to garlic and are members of the allium family which gives them their strong scent.

Apple cider vinegar has many health benefits, such as lowering blood glucose levels, possibly lowering blood pressure and possibly helping with weight loss.

Olive oil has heart-healthy fats that can reduce your risk of heart disease. It is composed of monounsaturated fatty acids that can lower your total cholesterol.

Ingredients (Makes 6 servings)

2 cloves garlic
1 tbsp fresh ginger
1 tbsp lemongrass
1/4 cup chopped cilantro
1 medium+4-1/8″+long green onion
1/2 cup apple cider vinegar
2 tbsp olive oil
2 tsp Liquid Aminos
Directions

Peel garlic and ginger and put in a mixing bowl.
Chop cilantro and green onion and add to other ingredients.
Add the lemongrass paste, apple cider vinegar, olive oil and Liquid Aminos.
Use an immersion blender to blend all ingredients until desired consistency.
